Tuscan White Bean Soup

Tuscan white bean soup with a golden, herb-and-rosemary broth, tender cannellini beans, and wilted kale. The soup thickens naturally when you mash part of the beans for a hearty Italian-style texture.

  • 2 can (15 oz) cannellini beans drained
pancetta or bacon
  • 4 oz pancetta or bacon diced
kale
  • 1 bunch kale stems removed and chopped
onion
  • 1 onion diced
garlic
  • 4 clove garlic minced
celery
  • 2 stalk celery diced
diced tomatoes
  • 1 can (14 oz) diced tomatoes
chicken or vegetable broth
  • 6 cup chicken or vegetable broth
fresh rosemary
  • 2 sprig fresh rosemary
parmesan rind
  • 1 parmesan rind optional but adds depth
Italian seasoning
  • 1 tsp Italian seasoning
olive oil
  • 1 tbsp olive oil for drizzling
parmesan shavings
  • 0.25 cup parmesan shavings for topping
crusty bread
  • 1 crusty bread for serving
salt
  • 1 tsp salt to taste
pepper
  • 0.5 tsp pepper to taste

Equipment

  • 1 Dutch oven

Method

Cook the pancetta
  1. Cook the pancetta in a large pot over medium heat until crispy, about 6 to 8 minutes, then remove and set aside as a topping.
Build the soup base
  1. Sauté the onion, celery, and garlic in the rendered fat over medium heat for 5 minutes, stirring until softened and fragrant.
  2. Add the diced tomatoes, broth, rosemary sprigs, parmesan rind (if using), and Italian seasoning, then bring to a boil with active bubbling around the edges.
Simmer and thicken
  1. Add the cannellini beans and simmer for 20 minutes until the beans are tender and the broth looks slightly thickened.
  2. Remove the rosemary sprigs and parmesan rind, then mash about a third of the beans in the pot until the soup turns creamier and more cohesive.
Finish with kale and season
  1. Add the kale and simmer for 5 to 8 minutes until wilted and deep green.
  2. Season with salt and pepper to taste, then drizzle with olive oil and top with parmesan shavings and pancetta for serving.

Notes

For extra silkiness, mash the beans while keeping some whole—about a third is enough to thicken without turning the soup fully puréed. Store in an airtight container in the refrigerator up to 4 days; freeze up to 2 months. To make it vegetarian, use vegetable broth and skip pancetta or replace with smoked olive oil sautéed mushrooms for a similar savory depth.
