Pineapple salsa ingredients
  • 2 cup fresh pineapple, diced diced into bite-size chunks
  • 1 red bell pepper, diced dice small for even texture
  • 0.5 red onion, finely diced fine dice for a smoother bite
  • 1 jalapeño, seeded and minced seed for less heat if desired
  • 0.25 cup fresh cilantro, chopped chopped
  • 2 Juice of 2 limes fresh lime juice
  • 1 tbsp honey for balance
  • 1 Salt to taste season to your preference
  • 1 Tortilla chips for serving for serving

Method
 

Make the pineapple salsa
  1. Combine fresh pineapple, red bell pepper, red onion, jalapeño, and fresh cilantro in a bowl.
  2. Whisk together the juice of 2 limes, honey, and salt until the honey dissolves.
  3. Pour the dressing over the pineapple mixture and toss well so everything is evenly coated.
Chill and serve
  1. Refrigerate for 30 minutes to let the flavors meld, then look for more unified color and juice coating the fruit.
  2. Serve with tortilla chips for dipping.

Notes

For the best flavor, dice everything to similar sizes so each scoop of salsa has pineapple, pepper, onion, and jalapeño. Store covered in the refrigerator for up to 3 days; the salsa can be frozen but texture will soften after thawing. For a lower-sugar option, reduce honey to 1/2 tbsp (or use a no-sugar-added honey substitute) to keep it bright while dialing back sweetness.
