Ingredients

Garlic Soup Base
  • 1 garlic Use about 20–24 peeled cloves from 2 heads.
  • 3 tbsp olive oil
  • 1 tbsp thyme leaves Fresh thyme leaves.
  • 0.5 tsp smoked paprika
  • 0.25 tsp cayenne
  • 4 cup chicken or vegetable broth
  • 2 cup water
  • 0.25 tsp salt To taste; add gradually.
  • 0.25 tsp black pepper To taste; freshly ground if possible.
  • 1 fresh parsley For garnish.
Serving Components
  • 4 crusty bread Slices, toasted.
  • 4 eggs Poach directly in the soup.

Equipment

  • 1 Dutch oven

Method

Cook the garlic
  1. Heat the olive oil in a large saucepan over medium-low heat, then add the garlic cloves and gently cook for 12–15 minutes until soft and golden but not brown, stirring as needed. The garlic should look tender and lightly golden, not caramel-dark.
Build the flavor
  1. Add the smoked paprika and cayenne and cook for 1 minute, stirring, until fragrant. Keep the heat gentle so spices don’t burn.
Simmer the soup
  1. Add the broth and water, bring the mixture to a boil, then simmer for 15 minutes. You should see steady bubbles across the surface.
Blend for a silky texture
  1. Use an immersion blender to blend most of the garlic smooth, leaving a few cloves whole. Stop when the broth looks silky with some visible garlic pieces.
Season
  1. Season the soup with salt, pepper, and thyme leaves, stirring until evenly distributed. Taste and adjust so the flavor is balanced.
Poach the eggs in the soup
  1. Gently crack the eggs into the simmering soup and poach for 3–4 minutes. The whites should be set while the yolks stay soft.
Serve
  1. Ladle the soup into bowls and serve with the toasted crusty bread, a poached egg centered in each bowl, and fresh parsley for garnish. Aim for a glossy, golden broth with visible garlic flecks.

Notes

Pro tip: toast the bread while the soup simmers so it’s ready the moment the eggs finish poaching. Store leftovers in the refrigerator up to 3 days; rewarm gently, but avoid re-poaching eggs in the stored soup to keep yolks from overcooking. Freezing is not recommended because the blended garlic soup can separate and the eggs will lose texture. For a lighter option, use low-sodium vegetable broth and reduce added salt to taste (still keep pepper and thyme for depth).
