Ingredients

Chicken thighs
  • 5 bone-in skin-on chicken thighs Use 4–6 thighs; choose a size that fits your rack without crowding.
BBQ sauce
  • 1.5 cup your favorite BBQ sauce Reserve a little extra for serving after resting.
Seasonings
  • 2 tbsp olive oil Helps the spices adhere and promotes browning.
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp onion powder
  • 0.25 tsp salt Use to taste; start with a small pinch per thigh.
  • 0.25 tsp pepper Use to taste; freshly ground is best.
Garnish
  • 1 fresh parsley Optional but recommended for color.

Equipment

  • 1 sheet pan
  • 1 cast iron skillet
  • 1 Dutch oven

Method

Preheat and prep
  1. Preheat the oven to 400F and set a wire rack inside a foil-lined baking sheet for air flow around the chicken.
  2. Rub the chicken with olive oil, garlic powder, smoked paprika, onion powder, salt, and pepper until evenly coated.
  3. Place the chicken skin-side up on the rack, leaving space between thighs so the skin can brown.
Bake and caramelize
  1. Bake at 400F for 25 minutes, until the chicken skin looks set and lightly browned.
  2. Brush generously with BBQ sauce and bake at 400F for 10 minutes, until the sauce starts to thicken.
  3. Brush with more BBQ sauce and bake at 400F for 5 more minutes, until deeply caramelized and sticky.
  4. Broil for 3-4 minutes for maximum caramelization, watching carefully so the sauce turns mahogany-colored without burning.
Finish and serve
  1. Rest the chicken for 5 minutes to let the glaze cling before serving.
  2. Serve with extra BBQ sauce and garnish with fresh parsley.

Notes

Pro tip: rack-baking helps excess fat drip away so the skin crisps while the sauce concentrates. Refrigerate leftovers in a sealed container for 3–4 days; reheat in a 375F oven until hot through. Freezing: yes, freeze cooked chicken for up to 3 months, then reheat covered to prevent drying. Dietary swap: use a low-sugar BBQ sauce for a lighter, slightly less-sweet glaze.
