Ingredients

  • 2 lb boneless skinless chicken breasts
  • 1 oz ranch seasoning mix
  • 0.5 cup chicken broth
creamy sauce
  • 8 oz cream cheese, cubed
  • 1 cup shredded cheddar cheese
bacon topping
  • 6 strips bacon, cooked and crumbled
  • 1 sliced green onions for garnish

Method
 

Slow cook the chicken
  1. Place chicken breasts in the slow cooker. Spread them in a single layer so they cook evenly.
  2. Sprinkle ranch seasoning over the chicken and pour chicken broth around it. Make sure the seasoning lands on the chicken and the broth collects at the bottom of the crock.
  3. Place cream cheese cubes on top. Cover the chicken with the cubes so they melt directly into the sauce.
  4. Cook on low for 6–7 hours or on high for 3–4 hours until the chicken is tender. You should be able to pull the chicken apart easily with a fork.
Shred and melt the sauce
  1. Remove chicken and shred with two forks. Shred until you have bite-size pieces throughout.
  2. Stir cream cheese into the sauce until fully smooth and melted. Keep mixing until no cream cheese lumps remain and the sauce looks glossy.
  3. Return shredded chicken to the slow cooker, then stir in half the bacon and all the cheddar until melted. The cheddar should fully melt and coat the chicken.
Serve
  1. Serve topped with remaining bacon and green onions. Use buns, mashed potatoes, or serve in bowls as desired.

Notes

For the smoothest sauce, shred the chicken after cooking while it’s still hot, then stir until the cream cheese disappears before adding cheddar. Store leftovers in the refrigerator up to 3–4 days in a covered container; reheat gently in the microwave or on low in the slow cooker until warmed through. Freezing is yes—freeze up to 2 months, thaw overnight in the fridge, then reheat. For a lighter option, use reduced-fat cream cheese and reduced-fat cheddar while keeping the same cooking times.
