Prep and layer
- Toss the potatoes, carrots, celery, and onion with olive oil, a pinch of salt, and black pepper, then layer them in the bottom of the slow cooker.
- Pour the chicken broth over the vegetables and add the minced garlic.
- Season the chicken thighs with garlic powder, paprika, dried thyme, dried rosemary, salt, and black pepper, then place them skin-side up on top of the vegetables.
Slow cook
- Cook on LOW for 6–7 hours until the chicken is cooked through and vegetables are fork-tender.
- If using HIGH, cook for 3–4 hours, until the chicken is cooked through and the vegetables are fork-tender.
Finish and serve
- Transfer chicken to a cast iron skillet and broil for 3–4 minutes to crisp the skin, watching closely to prevent burning.
- Spoon the broth juices over everything and serve garnished with fresh thyme or parsley.
Notes
For the best texture, keep the chicken skin-side up the whole time so it stays protected in the slow cooker. Store leftovers in the refrigerator up to 3–4 days in a covered container; freezer: yes, freeze up to 2 months and reheat gently.
