Ingredients

For apple filling
  • 6 apples
  • 0.25 cup granulated sugar
  • 2 tbsp brown sugar
  • 2 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tbsp lemon juice
For oat crumble topping
  • 2 cup rolled oats
  • 1 cup all-purpose flour
  • 0.75 cup brown sugar, packed
  • 1 tsp cinnamon
  • 0.25 tsp salt
  • 0.75 cup unsalted butter, melted
Serving
  • 1 vanilla ice cream
  • 1 caramel sauce

Equipment

  • 1 slow cooker
  • 1 sheet pan

Method

Make the apple filling
  1. Toss the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice, then spread them into the slow cooker in an even layer.
Make the oat crumble topping
  1. Combine rolled oats, all-purpose flour, packed brown sugar, cinnamon, and salt, then drizzle in the melted butter and toss until evenly moistened and clumps form.
Assemble and cook
  1. Scatter the crumble evenly over the apples so the topping forms a complete layer.
  2. Place a folded kitchen towel or several paper towels under the slow cooker lid to catch condensation, which helps keep the topping from getting soggy.
  3. Cook on Low for 2.5 to 3 hours, until the apples are tender and the topping is set.
Crisp and serve
  1. For a crispier result, broil for 3 to 4 minutes, watching for the top to turn deeper golden and feel set.
  2. Serve warm with vanilla ice cream and drizzle caramel sauce over the top.

Notes

Pro tip: condensation is the enemy of a crisp topping—use the towel/paper towel under the lid and avoid lifting the lid during the cook. Refrigerate leftovers in a covered container for up to 4 days; reheat in the oven or microwave until warmed through. Freeze is not recommended because the oat topping can soften after thawing. If you want a lighter option, use a reduced-fat butter substitute for the crumble.
