Method
Preheat and prep the dish
- Preheat oven to 375F and grease a 9x13 baking dish.
- Visually confirm the dish is evenly greased so the topping can crisp at the edges.
Make the cinnamon apple filling
- Toss apple slices with granulated sugar, cinnamon, nutmeg, cornstarch, and lemon juice, then spread evenly in the greased dish.
- Arrange the apples in a single even layer so the filling bubbles at the corners.
Assemble the oatmeal cookie crumble
- Combine rolled oats, all-purpose flour, brown sugar, cinnamon, baking soda, and salt in a bowl.
- Stir melted butter, honey, and vanilla together, then pour over the oat mixture and toss until every clump looks evenly moistened.
- Fold in raisins or dried cranberries if using.
- Scatter the oatmeal crumble in large chunks over the apples so the topping covers the surface.
Bake
- Bake 40-45 minutes at 375F until the topping is golden and the filling is actively bubbling.
- Look for crisp caramelized edges along the perimeter of the baking dish.
Rest and serve
- Rest 10 minutes after baking so the juices thicken slightly and the crumble sets.
- Serve warm for the best texture, ideally alongside ice cream.
Notes
For the crispiest, cookie-like topping, keep the crumble chunky (don’t press it into a smooth layer) and make sure the apples are spread evenly. Store covered in the refrigerator up to 4 days; reheat individual portions at 350F until warm. Freezing is not recommended due to the crumble texture. For a dairy-free swap, use a plant-based butter stick melted 1:1 in the crumble.
