Frozen Margarita Fudge
  • 14 oz sweetened condensed milk
  • 8 oz white chocolate, chopped
  • 0.25 cup tequila
  • 0.25 cup fresh lime juice
  • 2 tbsp butter
  • 0.25 cup powdered sugar
  • 1 tsp lime zest mixed with powdered sugar for the rim
  • 1 salt to taste

Method
 

Prepare the pan and melt the base
  1. Line an 8x8-inch baking pan with parchment paper, leaving overhang for easy lifting later.
  2. Combine sweetened condensed milk, chopped white chocolate, tequila, fresh lime juice, and butter in a microwave-safe bowl.
  3. Microwave at 30-second intervals, stirring between each, until the mixture is smooth and fully melted.
  4. Stir in powdered sugar and salt until no grainy pockets remain.
Freeze until firm and slice
  1. Pour the fudge mixture into the prepared pan and spread evenly to the corners.
  2. Sprinkle the powdered sugar-lime zest mixture evenly over the top to form a crystallized rim as it freezes.
  3. Freeze for at least 3 hours, until firm to the touch and sliceable.
  4. Cut into 16 pieces and store in an airtight container in the freezer for best texture.

Notes

For the brightest lime-sugar rim, sprinkle the lime-sugar mix right after spreading so it adheres before freezing. Keep covered in the freezer for up to 2 months; thaw in the fridge for 15–20 minutes for cleaner cuts. If you want a dairy-light option, use a plant-based white chocolate substitute that melts smoothly in the microwave.
