Method
 

Season and sear the chicken
  1. Season the bone-in chicken thighs with salt and pepper, then sear skin-side down in butter and olive oil for 6 minutes until golden.
  2. Remove the chicken to a plate after browning, keeping the rendered fond in the pot for flavor.
Build the cider cream sauce base
  1. Sauté the diced onion for 3 minutes, then add the minced garlic and cook for 1 minute.
  2. Add the hard apple cider (or white wine) and bring to a simmer, cooking for 3 minutes while scraping up the fond.
Simmer the chicken until tender
  1. Stir in the chicken broth, heavy cream, Dijon mustard, and fresh thyme until the sauce is smooth and combined.
  2. Return the chicken to the pot skin-side up and simmer gently for 30 minutes, until tender and cooked through.
Caramelize the apples and finish
  1. In a separate pan, sauté the sliced apples in butter until golden.
  2. Arrange the caramelized apples around the chicken and simmer for 5 more minutes to warm through and lightly thicken the sauce.
  3. Garnish with fresh parsley and serve hot.

Refrigerate leftovers in an airtight container up to 3 days; rewarm gently on the stovetop with a splash of cream or broth. Freezing is not recommended because the cream sauce can separate when thawed.
