Load the slow cooker
- Place the chicken breasts in the slow cooker.
- Add the black beans, corn, Rotel tomatoes, taco seasoning, and ranch seasoning on top of the chicken.
- Place the cream cheese cubes over everything.
Cook until shred-ready
- Cook on LOW for 6–7 hours or on HIGH for 3–4 hours until the chicken is cooked through.
Shred and combine
- Remove the chicken, shred with two forks, and return it to the slow cooker.
- Stir everything together until the cream cheese is fully melted and incorporated.
Serve
- Serve over rice, in tortillas, or in bowls topped with shredded cheddar cheese, sour cream, and fresh cilantro.
Notes
For easier shredding and more even melt, shred the chicken while it’s still hot, then stir thoroughly so the cream cheese disappears into the sauce. Refrigerate leftovers in an airtight container for up to 3–4 days; freeze up to 2 months. For a lighter option, use reduced-fat cream cheese (and reduced-fat shredded cheddar) to keep the creamy texture with fewer calories.
