Ingredients
  

Chicken
  • 2.5 lb boneless skinless chicken thighs Use thighs for juicy, pull-apart texture.
BBQ Sauce Mixture
  • 1.5 cup BBQ sauce Plus more for serving.
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp cayenne pepper

  • 1 cup extra BBQ sauce For drizzling on the sandwiches.

Method
 

Add chicken and sauce base
  1. Place the boneless skinless chicken thighs into the slow cooker in an even layer. Spread them so the sauce can contact the whole surface.
  2. Mix together the BBQ sauce, brown sugar, apple cider vinegar, smoked paprika, garlic powder, onion powder, and cayenne pepper in a bowl until the sugar is dissolved and the color looks uniform. This should look like a glossy reddish-brown mixture.
  3. Pour the BBQ sauce mixture over the chicken thighs, ensuring most of the chicken is coated. Scrape any remaining sauce mixture into the pot.
Slow-cook until tender
  1. Cook on low for 6–7 hours until the chicken is tender and pulls apart easily. The sauce should look thicker and cling to the chicken edges.
  2. If cooking on high instead, cook for 3–4 hours until the chicken is tender and pulls apart easily. The sauce should be bubbling lightly and reduced.
Shred and serve
  1. Remove the chicken from the slow cooker and shred it with two forks until you have strands. Keep shredding until no large chunks remain.
  2. Return the shredded chicken to the slow cooker and stir it into the sauce until evenly coated. The mixture should look consistent and glossy throughout.
  3. Serve the BBQ chicken on toasted brioche buns with pickles, coleslaw, and extra BBQ sauce. Aim for sticky sauce that drips slightly while the toppings stay piled.

Notes

Pro tip: For the best pull-apart texture, avoid stirring during the long cook and only shred after cooking. Store in the refrigerator up to 4 days in a sealed container; freeze shredded chicken and sauce up to 3 months (thaw overnight). For a lower-sugar option, use reduced-sugar BBQ sauce and keep the brown sugar at 1 tbsp.
