  • 2 tbsp brown sugar

  • 0.25 tsp nutmeg
  • 1 tbsp lemon juice
oat topping
  • 1.5 cup rolled oats
  • 1 cup all-purpose flour
  • 0.75 cup brown sugar Packed.
  • 1 tsp cinnamon
  • 0.25 tsp salt
  • 0.5 cup unsalted butter Melted.
to serve
  • 1 vanilla ice cream For serving.

Equipment

  • 1 cast iron skillet
  • 1 Dutch oven

Method

Prepare the apple filling
  1. Toss the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice, then transfer them to the slow cooker in an even layer.
  2. Arrange the apples so the surface is fairly level for even cooking under the topping.
Make the oat topping
  1. In a mixing bowl, combine rolled oats, all-purpose flour, packed brown sugar, cinnamon, and salt.
  2. Drizzle in the melted butter and stir until the mixture forms clumps.
Assemble and cook
  1. Scatter the oat topping over the apples in the slow cooker, keeping the layer on top and not stirring.
  2. Lay a double layer of paper towels under the lid to absorb excess moisture.
  3. Cook on Low for 2.5–3 hours, until the apples are tender and the topping is set.
Optional extra crisp
  1. Transfer the crisp to an oven-safe dish and broil for 3–4 minutes for a crispier topping, watching closely so it doesn’t burn.
Serve
  1. Serve the apple crisp warm with vanilla ice cream.

Notes

For best flavor, choose crisp apples (such as Honeycrisp or Granny Smith) so they hold texture after slow cooking. Refrigerate leftovers in a sealed container for up to 3 days; reheat in the oven or microwave until warmed through. Freezing is not recommended because the oat topping softens. For a lighter version, replace half the butter with unsweetened applesauce in the oat topping while keeping the clumpy texture by stirring briefly.
