Ingredients
  

Chicken
  • 2 lb boneless skinless chicken breasts
Ranch Cream Sauce
  • 8 oz cream cheese cubed
  • 1 can (10.5 oz) cream of chicken soup
  • 1 packet (1 oz) ranch seasoning mix
  • 0.5 cup chicken broth
  • 0.5 tsp garlic powder
  • 0.25 tsp black pepper
  • 1 fresh chives for garnish

Method
 

Cook the chicken
  1. Place the chicken breasts in the slow cooker. Spread them into an even layer so they cook uniformly.
  2. Mix the cream of chicken soup, chicken broth, ranch seasoning, garlic powder, and black pepper in a bowl until combined, then pour over the chicken. Make sure the chicken is mostly covered by the sauce mixture.
  3. Place the cream cheese cubes on top of the chicken. Keep the cubes visible at first so they melt into the sauce as it heats.
  4. Cook on low for 6–7 hours or high for 3–4 hours until the chicken is very tender. You should be able to easily pull it apart with a fork.
Finish the ranch sauce
  1. Remove the chicken from the slow cooker and shred with two forks. Shred into bite-size pieces while it’s still warm.
  2. Stir the sauce until the cream cheese is fully incorporated and smooth. Scrape the bottom and sides to prevent lumps.
  3. Return the shredded chicken to the sauce and stir to combine. Ensure every piece is coated with the creamy ranch mixture.
Serve
  1. Serve the creamy ranch chicken over mashed potatoes, rice, or in sandwich rolls. Garnish with fresh chives right before serving for a fresh, herby finish.

Notes

For the smoothest sauce, stir after cooking until no cream cheese streaks remain, then fold the shredded chicken back in. Refrigerate leftovers in an airtight container for up to 4 days; reheat gently until hot. Freezing is yes—freeze up to 2 months, then thaw in the fridge and reheat. If you want a lighter option, use reduced-fat cream cheese and reduced-sodium cream of chicken soup.
