  • 1 onion Dice finely for even sautéing.
  • 6 garlic Minced.
  • 4 cup vegetable or chicken broth Use 4 cups total.
Creamy base
  • 1.5 cup heavy cream Stir in after blending.
  • 3 tbsp unsalted butter For sautéing.
  • 2 tbsp olive oil For roasting the reserved florets.
  • 0.25 tsp nutmeg Ground.
  • 0.25 tsp white pepper Ground.
  • Salt to taste Season to your preference.
Garnish
  • 1 Truffle oil Drizzle to serve.
  • 1 chives Chopped for topping.
  • 1 crispy cauliflower Roasted reserved florets, caramelized.

Equipment

  • 1 Dutch oven
  • 1 immersion blender

Method

Roast reserved cauliflower for garnish
  1. Toss the reserved cauliflower florets with olive oil, then roast at 425F for 20-25 minutes until golden. Transfer to a plate and set aside for garnish.
Build the soup base
  1. Melt the butter in a large pot, then sauté the diced onion for 5 minutes. Cook until softened, then add the minced garlic and cook for 1 minute.
  2. Add the remaining cauliflower and the broth to the pot, bring to a boil, then simmer for 20 minutes until very tender. Keep the simmer steady so the cauliflower cooks evenly.
Blend and season
  1. Blend the soup completely smooth with an immersion blender until no cauliflower bits remain. Work in batches only if your blender requires it, and keep blending until fully silky.
  2. Stir in the heavy cream, nutmeg, and white pepper. Heat just until the soup is hot and cohesive, without boiling over.
  3. Season with salt to taste, then serve with roasted cauliflower, a truffle oil drizzle, and chives. Finish each bowl with the garnish while the soup is hot.

Notes

For the smoothest texture, blend until absolutely no grainy bits remain, then stir in cream off the heat or over very low heat. Store in an airtight container in the refrigerator for up to 4 days; reheat gently, thinning with a splash of broth if needed. Freezing is not recommended for the creamiest result, since dairy can change texture after thawing. For a dietary swap, use lactose-free heavy cream or a lactose-free cream alternative to keep the same creamy finish.
